Why does the formula subtract 32 first?
Because the two scales do not share a zero point. 32 °F is 0 °C, not 0 °F. So you first have to undo the offset by subtracting 32 (so 32 °F becomes 0 in the adjusted scale), then apply the scale conversion by multiplying by 5/9. The reverse formula adds 32 and multiplies by 9/5 to undo the operation.
Is there a quick mental conversion?
Subtract 30, then halve: 86 °F − 30 = 56; 56 / 2 = 28 °C (actual: 30 °C). The shortcut is "F minus 30, halve" and works within 1–2 °C for typical weather. For body temperature, subtract 32 first, then multiply by 0.55: (98.6 − 32) × 0.55 = 36.63 (actual 37).
